(Eiswein)
A seperate section of dessert wines and part of the QmP* category.
The grapes for these wines need to be harvested and pressed while
frozen, which achieves the concentration of extract, natural sugar
and acidity due to the fact that the water content of the grapes
remains in the press as blocks of ice. According to German law the
grapes have to be naturally frozen at the vine (not in a freezer,
like a Californian producer has done). The purpose is to achieve
high concentration and the juice has to have at least achieve the
ripeness level of a Beerenauslese* (BA) or better Trockenbeerenauslese*
(TBA). These wines are truly unique with a remarkable concentration
of fruity acidity and sweetness. Similar to BA and TBA, they can
age for many years and are often too acidic to be drunk young. |
